The Shallow Water Rum Bar began as a simple conviction: that rum deserves the same reverence as whiskey, the same care as wine. Nestled on Rum Island in Dickinson, our doors opened to a community hungry for something genuine — a place where the ice is clear, the spirits are chosen with intention, and the pace is dictated by the horizon.
We source rums from small distilleries across the Caribbean and the American South, aging our house blends in our own barrel program. Every cocktail tells a story of origin and craft. The bar itself is built from reclaimed Texas cedar — each plank carries the memory of another life, now serving as the stage for your evenings.
